Sake Wine Varietals
I’m a recent convert to Sake. I shared what I believe is most peoples’ experience with Sake; served warm in little porcelain cups. Occasionally I was treated to something chilled and interesting at a sushi bar but my view wasn’t altered until I met Lito Pineda.
With each sake Lito served I was transformed. The bouquets were striking and so different from one another; from distinctly cherry blossom to juniper to mushroom and on and on. Each was served chilled in a small wine glass which I’m sure benefited the fragrances. The flavours were marvelous and most importantly and distinct from my previous experiences immediately gripping in the mouth but supple in the finish. The food pairings will be endless.

Rice, water, koji-kin and yeast are all Sake requires to conjure millions of different aromas, flavors, textures and charms.
