A pleasingly dry, well-crafted sake much appreciated by connoisseurs. It has just enough body to support the spare lines of its structure, making it the kind of sake one can drink enjoyably for hours at a stretch. Its subdued, understated refinement evokes a sense of the northern province where it is meticulously brewed. Goes best with seafood and vegetable dishes simply prepared, including tempura. 99 Vines Pinot Grigio  
Characteristics: In Minnesota we have a great fishing tradition and culture. Whether you're in a canoe or a speedboat, there is great peace and tranquility to come from sitting back and casting a line. A few hours later you hopefully have a bucketful of walleye and bass (or even just some panfish), at which time you head to the shore for another great tradition: the shore lunch. Get a gigantic pot of water into a rolling boil, add carrots, potatoes, lots of spices, and more. Clean the fish you just caught and drop them in. Throw a little more heat (bacon fat works well) into the fire so the water rolls out and over the pot, putting the fire out. Dump the complete contents onto a newspaper covered picnic table and dive in. The wine? This one -- unpretentious, clean, bright, lively, and affordable. Simple as that.

Akitabare Spring Snow Sake  
Characteristics: Clearly led by their motto “Fierce adherence to tradition, skillful adaptation to change” the Akita Brewing Company is located in northwestern Honshu and makes this exceptional sake in the Sannai Toji style whose rule is subtlety. Light and dry, this is elegance incarnate with a mild balsam aroma that lends a whole new dimension to the floral fragrance. Mild starchy texture on the palate, this sake is nimble and gentle with a sophisticated yet soft spoken finish.

Characteristics: A lemony and apple-blossom nose melts into a candied pineapple and banana -WAIT! Banana Twin Pops! This wine tastes exactly like frozen banana popsicles and all of the warm childhood feelings that go with them. -BH
