99 Vines Pinot Grigio
Characteristics: In Minnesota we have a great fishing tradition and culture. Whether you're in a canoe or a speedboat, there is great peace and tranquility to come from sitting back and casting a line. A few hours later you hopefully have a bucketful of walleye and bass (or even just some panfish), at which time you head to the shore for another great tradition: the shore lunch. Get a gigantic pot of water into a rolling boil, add carrots, potatoes, lots of spices, and more. Clean the fish you just caught and drop them in. Throw a little more heat (bacon fat works well) into the fire so the water rolls out and over the pot, putting the fire out. Dump the complete contents onto a newspaper covered picnic table and dive in. The wine? This one -- unpretentious, clean, bright, lively, and affordable. Simple as that. Characteristics: AKITABARE 'KOSHIKI JUNZUKURI' "NORTHERN SKIES"
A pleasingly dry, well-crafted sake much appreciated by connoisseurs. It has just enough body to support the spare lines of its structure, making it the kind of sake one can drink enjoyably for hours at a stretch. Its subdued, understated refinement evokes a sense of the northern province where it is meticulously brewed. Goes best with seafood and vegetable dishes simply prepared, including tempura. Aldo Conterno Barolo Cicala 2005
Characteristics: SPECIES OF VINE: Nebbiolo, Michet and Lampia varieties. VINEYARD: “Cicala” vineyard, in Bussia (Monforte d'Alba). HARVEST: manual, with grapes selection in the vineyard. TIME OF HARVEST: mid-October. VINIFICATION: red, with skin soaking inside stainless steel vats. VINIFICATION TIME: the must stays on contact with the skins for 15 days: during this time the alcoholic VINIFICATION usually gets fully complete, and the wine is then drawn off. VINIFICATION TEMPERATURES: changeable, with highest peaks of 32 degrees centigrades. CELLAR REFINING: the new wine remains inside stainless steel vats for 3 to 5 months, and it undergoes several decantings before being put into big Slavonian oak barrels, where it is left ageing for 28 to 30 months; then, it will be bottled. NOTES: the vineyard “Cicala” [meaning: balm-cricket] is about 40-45 years old and its vines are replanted from time to time. Alexander Valley Vineyards Cabernet Sauvignon 2011
Characteristics: Named for the prized Alexander Valley within Sonoma, Alexander Valley Vineyards’ Cabernet Sauvignon is a nimble wine whose depth and complexity whisper some of its secrets: that this estate bottling hails from various lots with different soils each fermented separately and blended for breadth –and that this spectrum of flavors widens from mixing in the other country cousins which like Cabernet Sauvignon come from Bordeaux; those are Merlot, Cabernet Franc, Malbec and Petit Verdot who all come together during 14 months in barrel. In 2011, this meritage blend of sorts could pass as a Bordeaux from the Medoc for its tight red currants, a currant leaf aroma, a lifted spice, fine knit tannins, an al dente character worthy of the table, and a velvety mouthfeel. It somehow sates the desire for a big red without reading as sweet (as so many California reds have begun to read) and despite sating a thirst for a big red it also refreshes the palate with juicy acids.
