Sake WineI’m a recent convert to Sake. I shared what I believe is most peoples’ experience with Sake; served warm in little porcelain cups. Occasionally I was treated to something chilled and interesting at a sushi bar but my view wasn’t altered until I met Lito Pineda. With each sake Lito served I was transformed. The bouquets were striking and so different from one another; from distinctly cherry blossom to juniper to mushroom and on and on. Each was served chilled in a small wine glass which I’m sure benefited the fragrances. The flavours were marvelous and most importantly and distinct from my previous experiences immediately gripping in the mouth but supple in the finish. The food pairings will be endless.

Akitabare Junmai Saké 'Northern Skies'
Characteristics: AKITABARE 'KOSHIKI JUNZUKURI' "NORTHERN SKIES"
A pleasingly dry, well-crafted sake much appreciated by connoisseurs. It has just enough body to support the spare lines of its structure, making it the kind of sake one can drink enjoyably for hours at a stretch. Its subdued, understated refinement evokes a sense of the northern province where it is meticulously brewed. Goes best with seafood and vegetable dishes simply prepared, including tempura. Dewazakura Ginjo Saké '10th Degree'

Characteristics: DEWAZAKURA 'IZUMI JUDAN' "10TH DEGREE"
A martini-lover's sake: clear, high-octane and bone dry, with a hint of juniper reminiscent of Tanquerary. No other ginjo combines dryness (+12 on the sake scale) and edginess (36 proof) to such exhilarating effect. A peerless sake with toro and hamachi or serve with salmon roe, caviar and cocktail canapes. Drink well-chilled after forty minutes in the freezer. -World Sake

Dewazakura Ginjo Saké 'Cherry Bouquet'
Characteristics: DEWAZAKURA 'OKA' "CHERRY BOUQUET"
Light, fragrant and delicious, Oka was a tremendous hit when first introduced in 1981 and opened the way for breweries all over Japan to introduce premium labels. It is floral rather than fruity, though there is a touch of pear, and perhaps melon. Though aromatic, Oka is quite dry the perfect companion for clams on the half-shell, lightly dressed salads and white fish sushi or sashimi. A favorite among lady sake enthusiasts due to its delicacy and finesse. -World Sake
