Cabernet Sauvignon is a Teddy Roosevelt among the modern nobility. Its devotees circle the globe and it has won many a growers heart and fortune for good reason; thick, late ripening skins lend brawn, durability, structure, beguiling scents, myriad flavors and an born affinity to oak aging. Cabernet is a prism of a grape with the ability to take one beam and burst it into every color, shade and hue. Bordeaux continues as a great font for some of the finest examples but some rightfully argue the torch has been passed onto the rest of the world. Exploring the varietal California "Cabs," the sought after Maritage wines and the Bordeaux blends across the globe, one could easily devote a merry lifetime to learning every nook and cranny, height and depth -which there are many.
